Grilled Chicken with Creamy Avocado Salsita

Ingredients

  • ⅓ cup Chobani Non-Fat Plain Greek Yogurt
  • 2 medium tomatillos, husked, rinsed, chopped
  • ½ medium avocado, chopped
  • Juice of ½ lime
  • 1 medium jalapeño, roughly chopped
  • ¼ bunch cilantro leaves
  • ½ tsp kosher salt
  • ¼ tsp sugar
  • ¼ tsp ground cumin
  • 3 Tbsp water
  • Cooking spray
  • Four 4-oz pieces uncooked boneless skinless chicken breasts

Instructions

  1. Place all of the ingredients, except chicken (and cooking spray), in a blender and purée until smooth, using a rubber spatula to scrape down the sides and bottom of the blender as needed. Set aside.
  2. Off heat, coat a grill rack or stove-top grill pan with cooking spray; heat to medium-high heat. Grill chicken until cooked through, flipping once, about 5 to 7 minutes per side.
  3. Transfer chicken to plates and top with salsita, adding salt to taste.
Serving Size: 1 chicken breast and about 1/4 cup salsita per serving.
